Couldn’t be more stoked on the 2025 release. This year’s Mexico/Ethiopia/Sumatra combo hits hard in all the right ways — intensely sweet, deeply comforting, and layered with character. Think sweet tobacco, dark chocolate, cedar and pine, with a subtle roastiness that nods to campfire nights. The acidity is round and juicy, bringing ripe red fruit that ties the whole experience together. If we aimed for “roasting marshmallows by a crackling fire with a glass of red wine,” we landed it. And with this year’s red-velvet-meets-chocolate vibe? Absolute holiday magic. –Nick
