Some coffees surprise you from the first sip — Roaster’s Reserve: El Salvador Rainbow is one of them. Grown at Finca El Gobiado, a 37-acre family farm in the misty Illamatepec mountains near Concepción de Ataco, this vibrant lot comes from the Alfaro family, who have been cultivating exceptional coffee here for four generations. A colorful mix of red, orange, and yellow Bourbon varietals undergoes a meticulous 96-hour anaerobic fermentation before slowly drying on shaded raised beds for more than 20 days, a process that unlocks remarkable clarity and complexity in the cup. The result is a light-medium roast that’s bright, juicy, and unforgettable — think watermelon, lime zest, and pink lemonade, layered with flashes of lychee, pineapple, and grape, finishing smooth and balanced. It’s a coffee that feels almost electric — zesty, refreshing, and memorable, like discovering your own little pot of gold at the end of the rainbow.
